摘要:
云南作为香型软米的发源地,蕴藏着极为丰富的香型软米种质资源。目前,在香型软米种质资源的发掘与利用研究上,已取得了诸多重要进展。本文着重综述了香型软米的起源、分布、类型,食味品质的形成机制、评价标准与营养功效,香味的主要成分、合成途径及遗传调控机制,非生物胁迫对香味和食味品质形成的影响机制,以及种质资源发掘与利用的研究现状,并提出了未来育种研究的几点设想,助力香型软米研究发展。
