Progress and Prospects in Fragrant Soft Rice Breeding

摘要:

云南作为香型软米的发源地,蕴藏着极为丰富的香型软米种质资源。目前,在香型软米种质资源的发掘与利用研究上,已取得了诸多重要进展。本文着重综述了香型软米的起源、分布、类型,食味品质的形成机制、评价标准与营养功效,香味的主要成分、合成途径及遗传调控机制,非生物胁迫对香味和食味品质形成的影响机制,以及种质资源发掘与利用的研究现状,并提出了未来育种研究的几点设想,助力香型软米研究发展。

Abstract:

As the place of origin of fragrant soft rice, Yunnan Province possesses exceptionally rich germplasm resources of this rice type. Significant progress has been made in the exploration and utilization of these fragrant soft rice germplasm resources. This review focuses on several key aspects: the origin, distribution, and types of fragrant soft rice; the formation mechanisms, evaluation standards, and nutritional benefits of its eating and cooking quality; the main components, biosynthetic pathways, and genetic regulation of its fragrance; the impact mechanisms of non-biological stress on the formation of fragrance and eating quality; and the current research status regarding germplasm resource exploration and utilization. Furthermore, several perspectives for future breeding research are proposed in order to promote the research and development of fragrant soft rice.
